Recipe: Nectarine Vinegar

3 Ripe Californiz nectarines;
-coarsely chopped
1 Stick cinnamon; broken into
-several pieces
12 oz White wine vinegar

Place all ingredients in non-metallic container. Mash fruit while
stirring; cover tightly. Let stand 10 to 14 days. Strain.
