Recipe: Naturally Cheesy Layered Lettuce Bowl (Corrected)
For 4 Persons

1 c Shredded County LineŽ Sharp
-Cheddar Cheese
1 c Plain yogurt or sour cream
1 lg Head iceberg lettuce
1 1/2 c Shredded County LineŽ Old
-World Swiss Cheese
3/4 c Fresh spinach; torn into
-bite-size pieces
3/4 c Cooked brown or white rice;
-chilled
1 cn (11 ounces) Mandarin orange
-segments
3/4 c Chopped pecans
Dollop of plain yogurt or
-sour cream for garnish
Stir together Cheddar cheese and 1 cup yogurt; set aside. Remove inside
portion of lettuce head. Spread 1/2 cup of Cheddar cheese mixture inside
shell. Layer with 3/4 cup Swiss cheese, spinach, rice, 2 cup cheese
mixture, orange segments, 3/4 cup Swiss cheese, remaining cheese mixture,
and pecans. Refrigerate 3 hours or until ready to serve. Cut into wedges.
Carnish with dollop of yogurt or sour cream.
