4 Thai green chiles; chopped

1 Kaffir lime; use only the

-zest; grated

1 Blade lemon grass; chopped

2 Cloves garlic; chopped

3 Shallots; chopped

1 Piece (1-inch) galangal;

-chopped

1 Piece (1-inch) ginger root;

-chopped

Salt; to taste
