Recipe: Mache and Beet Salad
For 1 Persons

2 c Mache
4 White or golden beets
-- cooked, peeled & chopped
1 ts Chopped lovage or parsley
2 tb Balsamic vinegar
5 tb Olive oil
2 Eggs, hard-boiled
1/2 c Home made croutons
In a salad bowl combine lovage or parsley, vinegar and oil. Add beets, toss
to coat and marinate for 1 hour. Add mache, toss, garnish with eggs and
croutons.
