Recipe: Ham and Eggplant Casserole





For 6 Persons

1 md Eggplant; pared and cubed

1 lg Onion; chopped
1/4 c Butter or margarine

1 c Applesauce

2 c Diced ham
1/2 ts Sage
1/4 ts Salt

1 c Seasoned bread crumbs

2 tb Butter; melted

Mix eggplant, onion and butter in a 3 quart casserole. Cover with plastic
wrap. Microwave at high (100%) until onion is tender, 9 to 10 minutes,
stirring once during cooking time. V Add applesauce, ham, sage and salt
Combine bread crumbs and melted butter. Sprinkle over top. Microwave at
high (100%) until eggplant is tender, 4 to 5 minutes. Makes 6 servings.
