Recipe: Fatfree Fruit Muffins





For 12 Persons

1 1/4 c Flour; white or wholewheat

1 c Oat bran or oatmeal
1 1/4 ts Cinnamon

1 tb Baking powder
1/2 c Evaporated skim milk
1/2 c Defrosted apple juice

-concentrate

1 Egg -or-

2 Egg whites or equivilent

1 Ripe banana; mashed -or-
1/2 c Applesauce

1 c Fruit; berries, diced

-peaches, pears; apples,

-raisins, whatever
1/2 c Nuts; if you like

Mix dry ingredients. Stir together wet ingredients except 1 cup fruit.
Blend together wet and dry, add fruit and nuts. Bake 425 for 17 minutes.
