Recipe: Fat-Free Banana Muffins





For 1 Persons
Category: Low-fat, Muffins

1 1/2 c Flour
1/4 c Sugar

2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/2 ts Cinnamon

2 Egg whites

2 Large; ripe bananas, well

-mashed
2/3 c Skim milk
1/2 c Karo light or dark corn

-syrup

Spray 12 (2 1/2-inch) muffin cups with cooking spray. In medium bowl
combine dry ingredients. In large bowl, beat egg whites lightly. Stir in
bananas, milk and corn syrup. Add dry ingredients; stir until well blended.
Spoon into prepared muffin cups. Bake in 400 degree F oven 22 to 25 minutes
or until firm to touch. Cool in pan 5 minutes. Remove; cool on wire rack.
