5 fl Low-fat natural yogurt

Salt and Pepper

1 Garlic clove, peeled and

-crushed

2 inch length cucumber,

-peeled and chopped

1 tb Freshly chopped mint

1 tb Freshly chopped parsley

Extra chopped mint, to

-garnish

Drain off any liquid from the yogurt, place in a bowl and whisk until
smooth.

Add the remaining ingredients, except garnish, and mix well. Turn into a
serving bowl and chill for 30 minutes. Sprinkle with extrac chopped mint to
serve.
